I am lucky in that if they like something they will beat that dead horse over and over. They would seriously eat quesadillas or tacos every day and not complain. I usually make some sort of filling to keep the the fridge, and they will easily go two weeks or more without complaint.
Last week, I made a 2 crockpots full of refried beans. They were turned in to quesadillas, burritos, nachos and even soup. Today, Christian took some of the leftover soup and topped his nachos with it.
Here is what is in the crockpot right now.
Burrito/taco/quesadilla Filling
2 1/2 lbs. 93/7 ground turkey
3 cups water
1 T. beef better than bouillon
2 cups lentils
1 large onion
6 large garlic cloves
2 cups refried beans
2 cans diced tomatoes, drained
oregano
cumin
chili powder
cayenne pepper
Brown meat with garlic and onion. Drain and transfer to crockpot. Mix water and better than bouillon and bring to a boil. Add lentils and cook until tender. Transfer to crockpot. Add drained tomatoes, refried beans and seasonings to taste. Add 1 cup water. Stir well and cook on low until warmed through and the flavors meld.
Notes:
- The lentils will stretch what would only be 2 meals worth of meat in to a weeks worth.
- The refried beans are there to hold it all together. I didn't want it to be runny, so that they could use it on quesadillas if they want to.
